I absolutely LOVE strawberries. Now that it’s summertime, they are a staple in my refrigerator (especially when they’re on sale!). I wanted to make sure to use them up before they went bad, and I had been craving a strawberry dessert. So of course, strawberry pie came to mind! This is another recipe I never really knew about until meeting my husband. My mother-in-law makes a delicious strawberry pie, so I decided to give it a try. This is a perfect summertime dessert since it’s served cool. It’s also a beautiful red color, perfect for the Fourth of July! Strawberry pie is also super easy to make, and can totally be made the day before a party or get together. Definitely worth giving it a try!
Strawberry Pie
Ingredients
Graham Cracker Crust
- 1½ cups graham cracker crumbs
- ⅓ cup sugar
- 6 Tbsp butter melted
- ½ tsp cinnamon
Strawberry Pie Filling
- 1 cup sugar
- 1½ cup water
- ¼ cup cornstarch
- 1 lb strawberries sliced
- 3 oz package strawberry Jell-O
Instructions
Graham Cracker Crust
- Mix graham cracker crumbs, sugar, melted butter, and cinnamon until well blended. I used a food processor to combine these ingredients.
- Press mixture into an 8-9 inch pie pan.
- Bake at 375°F for 7 minutes. Let cool for about one hour.
Strawberry Pie Filing
- In a large saucepan, add sugar and water and heat over medium high heat. Slowly whisk in cornstarch. Incorporate well making sure there are no lumps.
- Stir continuously for 4-5 minutes or until the mixture begins to thicken and turns slightly clear.
- Remove from heat and whisk in the strawberry Jell-O package until it has dissolved completely. Let cool to room temperature.
- Add in the strawberries to the Jell-O mixture, making sure they are evenly coated. Pour into the prepared graham cracker crust.
- Place in the refrigerator and cool for 2-3 hours. Enjoy!
