Rice Krispies S’More Pinwheels

I may have mentioned before, Scotcheroos are my absolute favorite dessert. But I have to say, these pinwheels are a close second. Oddly enough, I am not a huge marshmallow fan, but these are AMAZING. A coworker of mine brought these in once for a potluck, and I was dying to make them since. They were an absolute hit! These are perfect for any occasion, and are a sure crowd-pleaser. I am wishing I made more!

Course Dessert

Ingredients

  • 10.5 oz miniature marshmallows
  • 4 Tbsp butter
  • 5 cups Rice Krisipies cereal
  • ¾ cup graham cracker crumbs
  • 7 oz marshmallow creme
  • 6 Hershey's chocolate bars

Instructions

  • Preheat oven to 200°F. Line a 10×15 jellyroll pan with waxed paper or foil. Grease and set aside.
  • Melt mini marshmallows and butter over medium-low heat in large pot. Stir until completely melted and smooth. Remove from heat. Stir in cereal and graham cracker crumbs.
  • Press mixture into greased jellyroll pan. Press down until the Krisipies are one even layer. Evenly spread marshmallow creme over top of cereal mixture using an offset spatula or knife. Place Hershey's bars on top of the marshmallow layer. Heat in oven for 3-4 minutes, until chocolate is soft. Spread chocolate in an even layer. Let sit for 10 minutes.
  • Roll into a log, starting at one end. Place in fridge for about 35-40 minutes. Remove and slice. Enjoy!
