Korean Beef and Broccoli

When you are looking for a quick and easy weeknight meal, this is a perfect go-to! It is so simple and tastes delicious! It is also great reheated the next day.

Korean Beef and Broccoli

Ingredients
  

  • 1 head broccoli florets
  • 2 Tbsp olive oil
  • water
  • 1 lb ground beef
  • 3 cloves garlic minced
  • ¼ cup brown sugar
  • ¼ cup soy sauce
  • 1 Tbsp vegetable oil
  • ¼ tsp ground ginger
  • ¼ tsp crushed red pepper flakes
  • ¼ tsp pepper
  • sliced green onions
  • 2 cups cooked white rice

Method
 

  1. In a large skillet, sautee broccoli on medium-high heat in 2 Tbsp for a few minutes until it begins to soften. Add water, lower heat and cover, and steam until cooked through, about 5 minutes. Set aside.
  2. In the same skillet, brown ground beef with minced garlic. Drain any excess fat.
  3. While the beef is browning, whisk the brown sugar, soy sauce, vegetable oil, ginger, red pepper flakes, and pepper in a small bowl.
  4. Add broccoli to the beef and pour sauce over beef and broccoli. Let simmer for another 2 minutes.
  5. Serve over rice and garnish with green onion slices.
