Peach Crisp

Ingredients
  

Crumble Topping
  • 1 cup brown sugar
  • 1 cup old fashioned oatmeal
  • 1 cup all purpose flour
  • 1 stick melted butter
  • ¼ tsp ground cinnamon
Peach Filling
  • 6-8 fresh peaches cored and diced
  • ¼ cup granulated sugar
  • 2 Tbsp all purpose flour
  • 2 tsp lemon juice
  • ½ tsp vanilla extract
  • dash salt
  • dash cinnamon

Method
 

  1. Add diced peaches to a medium bowl and add ¼ cup sugar. Toss to coat peaches. Let peaches sit for about 20 minutes.
  2. Combine all ingredients for the crumb topping and set aside.
  3. Preheat oven to 375°F.
  4. Mix the the flour, lemon juice, vanilla, salt and cinnamon with the peaches until combined.
  5. Pour the peach mixture into individual ramekins, allowing enough room for crumble topping.
  6. Sprinkle the topping over each ramekin until they are evenly coated.
  7. Bake for about 20-23 minutes, or until golden brown.
  8. Remove from oven and allow to cool slightly before eating.
  9. This recipe tastes great topped with vanilla ice cream or Cool Whip!
