Peach Crisp

During the summer, peaches are one of my go to fruits. They are perfect for any time of the day and have such delicious flavor. My husband and I were out of town for a few days, and when we got back, my peaches were beginning to get too soft. Of course I couldn’t let them go to waste, so I decided to make individual peach crisps for a refreshing summertime dessert.

Ingredients
  

Crumble Topping

  • 1 cup brown sugar
  • 1 cup old fashioned oatmeal
  • 1 cup all purpose flour
  • 1 stick melted butter
  • ¼ tsp ground cinnamon

Peach Filling

  • 6-8 fresh peaches cored and diced
  • ¼ cup granulated sugar
  • 2 Tbsp all purpose flour
  • 2 tsp lemon juice
  • ½ tsp vanilla extract
  • dash salt
  • dash cinnamon

Instructions
 

  • Add diced peaches to a medium bowl and add ¼ cup sugar. Toss to coat peaches. Let peaches sit for about 20 minutes.
  • Combine all ingredients for the crumb topping and set aside.
  • Preheat oven to 375°F.
  • Mix the the flour, lemon juice, vanilla, salt and cinnamon with the peaches until combined.
  • Pour the peach mixture into individual ramekins, allowing enough room for crumble topping.
  • Sprinkle the topping over each ramekin until they are evenly coated.
  • Bake for about 20-23 minutes, or until golden brown.
  • Remove from oven and allow to cool slightly before eating.
  • This recipe tastes great topped with vanilla ice cream or Cool Whip!
