During the summer, peaches are one of my go to fruits. They are perfect for any time of the day and have such delicious flavor. My husband and I were out of town for a few days, and when we got back, my peaches were beginning to get too soft. Of course I couldn’t let them go to waste, so I decided to make individual peach crisps for a refreshing summertime dessert.
Peach Crisp
Ingredients
Crumble Topping
- 1 cup brown sugar
- 1 cup old fashioned oatmeal
- 1 cup all purpose flour
- 1 stick melted butter
- ¼ tsp ground cinnamon
Peach Filling
- 6-8 fresh peaches cored and diced
- ¼ cup granulated sugar
- 2 Tbsp all purpose flour
- 2 tsp lemon juice
- ½ tsp vanilla extract
- dash salt
- dash cinnamon
Instructions
- Add diced peaches to a medium bowl and add ¼ cup sugar. Toss to coat peaches. Let peaches sit for about 20 minutes.
- Combine all ingredients for the crumb topping and set aside.
- Preheat oven to 375°F.
- Mix the the flour, lemon juice, vanilla, salt and cinnamon with the peaches until combined.
- Pour the peach mixture into individual ramekins, allowing enough room for crumble topping.
- Sprinkle the topping over each ramekin until they are evenly coated.
- Bake for about 20-23 minutes, or until golden brown.
- Remove from oven and allow to cool slightly before eating.
- This recipe tastes great topped with vanilla ice cream or Cool Whip!
