Dad’s Classic Chili

Growing up, chili was always a favorite comfort food of mine. Living in the Midwest provided for many brutal winters. There was nothing better than coming home to a warm bowl of Dad’s chili. This recipe is based off of his (which won many chili cook-off competitions)!

Ingredients
  

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 green pepper diced
  • 1 clove garlic minced
  • ½ large yellow onion diced
  • 16 oz can diced tomatoes
  • 16 oz can dark kidney beans
  • ½-¾ can tomato sauce
  • 1 packet chili seasoning

Method
 

  1. Sautee green pepper, garlic, and onion in olive oil until onions turn translucent.
  2. Add the ground beef to the vegetables and cook until all of the meat is browned. Drain some of the grease, but leave a little for flavor.
  3. Add the rest of the ingredients: diced tomatoes, kidney beans (liquid and all), tomato sauce, and chili seasoning packet. If you prefer your chili spicier, feel free to add some chili powder!
  4. Chili is best after simmering for awhile, but you can enjoy immediately!
