Growing up, chili was always a favorite comfort food of mine. Living in the Midwest provided for many brutal winters. There was nothing better than coming home to a warm bowl of Dad’s chili. This recipe is based off of his (which won many chili cook-off competitions)!
Chili
Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 green pepper diced
- 1 clove garlic minced
- ½ large yellow onion diced
- 16 oz can diced tomatoes
- 16 oz can dark kidney beans
- ½-¾ can tomato sauce
- 1 packet chili seasoning
Instructions
- Sautee green pepper, garlic, and onion in olive oil until onions turn translucent.
- Add the ground beef to the vegetables and cook until all of the meat is browned. Drain some of the grease, but leave a little for flavor.
- Add the rest of the ingredients: diced tomatoes, kidney beans (liquid and all), tomato sauce, and chili seasoning packet. If you prefer your chili spicier, feel free to add some chili powder!
- Chili is best after simmering for awhile, but you can enjoy immediately!
