Ok. So I seriously LOVE cinnamon rolls. But they are such a process to make homemade. This casserole/bake combines french toast and cinnamon rolls. And it’s a match made in heaven! It’s great because it is so easy to make and can feed a crowd. Plus it is much quicker than making homemade cinnamon rolls. This bake is perfect for when you need to satisfy your cinnamon roll craving, but don’t have the time. It also reheats super well (if there is any leftover!).
Cinnamon Roll French Toast Bake
Ingredients
- ¾ – 1 loaf sliced bread (white or wheat)
- 5 eggs
- ¾ cup milk
- 2 tsp vanilla extract
- ½ Tbsp cinnamon
- dash nutmeg
- ½ cup brown sugar
- ½ Tbsp cinnamon
- ¼ cup butter softened
- 4 oz cream cheese softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F.
- Slice bread into cubes and layer evenly into a greased 9 X 13 pan.
- Whisk together the eggs, milk, 2 tsp vanilla extract, ½ Tbsp cinnamon, and nutmeg in a bowl until thoroughly combined. Pour entire mixture over the cubed bread, making sure all pieces are wet. If some of the bread cubes are above the liquid, you can squish them down. It is also okay if they are not totally in the liquid because they are delicious crisped on the top!
- Sprinkle the brown sugar and ½ Tbsp cinnamon evenly on top. Bake in the oven for 25 minutes, or until all of the liquid has been absorbed and baked.
- Meanwhile, you can make the cream cheese frosting: Beat the softened butter and cream cheese until well blended. Add in the powdered sugar and 1 tsp of vanilla extract and beat until creamy. Spoon frosting into a piping bag or Ziploc bag. Once the bake is out of the oven, pipe the frosting in a fun design over the top. Delicious!!
Notes
You can prepare this overnight and bake in the morning. Cover the cubed bread with the liquid mixture and set in the fridge. When you take it out in the morning, sprinkle the brown sugar and cinnamon on right before baking. It may take an additional 5 or so minutes to bake if you soak overnight.
Any frosting works with this, but I LOVE cream cheese frosting. Feel free to make your favorite instead!
