Beef Enchiladas

As usual, I could not decide what to make for dinner. I had my mind set on chili (see recipe here), but when I got home, I realized I did not have all of the ingredients I needed! So on to Plan B…I created this recipe using the ingredients I had on hand, and there are many ways you can add other ingredients as well. But for a basic, yet truly delicious recipe, give this one a try!

Beef Enchiladas

Ingredients
  

  • 1 lb ground beef
  • 8 oz can refried beans
  • 6 oz can tomato sauce
  • 1 tbsp ketchup
  • ¼ cup taco seasoning
  • 6 flour tortillas
  • 10 oz can enchilada sauce
  • 1-2 cups shredded cheese

Method
 

  1. Preheat oven to 350°F.
  2. Brown ground beef. Drain any fat and add refried beans, tomato sauce, ketchup, and seasoning.
  3. Spoon the ground beef mixture into tortillas. Roll the tortillas and place side by side in a greased 9X13 pan. Pour enchilada sauce over the tortillas until it is evenly dispersed.
  4. Cover with foil and bake for 25 minutes, or until heated thoroughly. Remove foil and sprinkle the shredded cheese over the tortillas. Bake for an additional 5 minutes.
