As usual, I could not decide what to make for dinner. I had my mind set on chili (see recipe here), but when I got home, I realized I did not have all of the ingredients I needed! So on to Plan B…I created this recipe using the ingredients I had on hand, and there are many ways you can add other ingredients as well. But for a basic, yet truly delicious recipe, give this one a try!
Beef Enchiladas
Ingredients
- 1 lb ground beef
- 8 oz can refried beans
- 6 oz can tomato sauce
- 1 tbsp ketchup
- ¼ cup taco seasoning
- 6 flour tortillas
- 10 oz can enchilada sauce
- 1-2 cups shredded cheese
Instructions
- Preheat oven to 350°F.
- Brown ground beef. Drain any fat and add refried beans, tomato sauce, ketchup, and seasoning.
- Spoon the ground beef mixture into tortillas. Roll the tortillas and place side by side in a greased 9X13 pan. Pour enchilada sauce over the tortillas until it is evenly dispersed.
- Cover with foil and bake for 25 minutes, or until heated thoroughly. Remove foil and sprinkle the shredded cheese over the tortillas. Bake for an additional 5 minutes.
